Happy Humpday! There’s nothing like starting your Wednesdays off with a healthy option right?! Having a balanced life just seems nearly impossible, or just completely impossible but it doesn’t keep me from trying! I’m kind of an all or nothing girl, which means when I fall off the wagon, I tend to fall HARD. So maintaining a good balance is something I strive for… and haven’t found yet, haha!
I could eat this protein packed apple cinnamon oatmeal every.single.day. I try to stay away from grains in general, they can be super inflammatory, not to mention high glycemic and just all around not great for you, but sometimes I need a good fillerup kind of meal, ya feel me? I’m (mostly) gluten free so when I do indulge, it’s always a gluten free option. As I was exploring the GOOP website that I’ve become SO obsessed with, I found a recipe that inspired me to create my own version of healthy oatmeal. I will link their recipe as well!
Here’s my version:
1 apple diced
1/2 cup organic gluten free oats
1 1/2 teaspoons chia seeds
1 1/4 cup water
1/2 teaspoon cinnamon
1 scoop plant based (or non-dairy) protien powder (I use this one)
Small handful almond slices
In a medium sauce pan, bring 1/4 cup water, cinnamon 3/4 diced apple to a simmer. Simmer for about 5 minutes. Add 1 cup water, and oats and bring to a light boil, turn heat down and simmer for about 10 minutes or according to directions on your oatmeal package. Halfway through cooking the oatmeal, add the protein powder and chia seeds, stir until protein powder is dissolved, continue cooking for the remaining time.
Transfer oatmeal to your bowl, add nuts and remaining diced apple, sprinkle with cinnamon and ENJOY!
*I always add almond or coconut milk to my cooked oatmeal so it’s not so thick
